So got the car back today (took a while to bring it in as I was sick).

Camera module was acting up so they replaced it. Also fixed a rattle in the door that developed the last month or two.

Overall very undramatic.

Lately the V60 has developed a tendency to rattle under very hard acceleration. Metallic kind of sound, almost like the exhaust is banging around or maybe a heat shield...or maybe a gremlin is sitting in the back with some rocks in a tin can. I think its coming from the back of the car but not sure.

Doesn't happen during "normal" driving at all, only when you really give it the beans.

This is starting to get a bit irritating. :)

That's exactly what I thought.  Had the same thing with my old Audi A90, and it turned out that the CC needed replacement.  Sounded like a marble being blown around in a tin can.

I'd say heat shield or cat-con.

However, Yuro machines have rollerized muffler bearings (as opposed to regular muffler bearings) so it could be that.  And where the muffler bearings join the Johnson Rod, that can make horrible sounds too.

This.  Co-worker had it happen on his 2008 MDX and disappeared once the catalytic converter was replaced under warranty.

I would doubt it is a catalyst converter problem. A loose cat makes noise on start up and shut down. Plus you should have a MIL on for catalyst efficiency if the cat has failed.
