Yeah, crosstrek is something that I have on my mind for a long time, but cannot go this one step further and decide myself for sure. I love them wagons though.

11.9 seconds is by far the slowest I've seen for any road test. Most have the CVT somewhere around 10 seconds.
My guess is elevation.

Still super slow....hard to feel safe when there are tons of trucks out there that can get to 60 in less than 6s.

I must be the best driver in the world as I drove a 130hp Protege5 across the USA and back and didn't have any issues keeping up.

That's driver behaviour, not the car.  I've driven the car over places like the Coq, the passes on the Parkway and so on without being in anyone's way.  I see lots of pick up drivers doing dangerous crap from blocking the left lane to tailgating and tons of other crap - is that the fault of the truck, or the driver?

I really want to like this car but I can't stomach spending 30k + for the powertrain it provides. I don't have an issue with the low hp, it's more the fact it's underpowered with a CVT. This seems like more of a urban city car than a highway crusier. The higher end trims for the Crosstrek and Impreza get grossly expensive for what's under the hood.

The 2018 Crosstrek is now listed on the Subaru website.  I think it went up about a week ago.

Looks like they have added a class at the low end of the lineup:  Convenience.

You're spending a lot of time researching 0-60 times and this tells me you won't be happy with this car.  Over time its lack of power will be a real annoyance.
What is adequate performance for one person might not be for another.  I took out a CX5 and a RAV4 Hybrid and found them slow.  I knew that if I bought either of these two SUVs I wouldn't be happy with the performance.  I ended up buying a BMW X1,with 240 hp and I couldn't be happier.
In the end it's what YOU will be happy with.
If the lack of power bothers you now look for something faster.

That's a ridiculously contrived "test". I had an XV. Traction was never an issue, even when one or two wheels were on bare ice.

That is a tricky test!  You can idle the car, and it doesn't know that the wheel is slipping because all vehicles have to have some way for you to stop.  So, he's technically at a stop, just idling.  Notice as soon as he comes up off idle, the car moves forward, but he stops it right away to make it look like it failed.

I know the new Mazda system is good, but c'mon, that's clearly messed up.

Everyone derided the old "90:10" Subaru AWD system as found in the long-ago automatic equipped cars.  Well, our old Forester has that so-called "weak" system and it kicks a$$.

The reality is that for 99.9% of people out there, even the slip/grip systems are more than enough AWD.
