I'm trying to work out if the winter tyres from my Camry will fit the Versa. The winters from my Camry are 205/65R16. This size doesn't appear for the Versa on tire rack, although the Versa originally came with 16s. How would I know for sure if the Camry winters would fit on the Versa?

Tirerack shows 16" 195/55/16 for Versa

Going to the 205/65 will sure give you a larger sidewall!!
How fast is my 911?  Supras sh*t on on me all the time...in reverse..with blown turbos  :( ...

Which for winter isn't a bad thing.

But a narrower tire is better for winter....

That's up 3 sizes.  Generally you can get away with 2 sizes, but rarely 3.  BTW, Discount tire only lists a one size increase as having enough room.

What about going from all season @ 205/55R16 to winter @ 205/65R16?

Trying to see if I can sell my old tyres to a friend.

Probably won't hurt anything.  He'll have a bit more sidewall/ground clearance.
