Stability control shouldn't kick in much if at all on the track if you are smooth, practice makes better 
Shouldn't Stability control be switched off at the track anyways?

Unless you are a pro, no. It can save your bacon if things get hairy. You never know what will happen. Even in a low torque RX-8.
Last track day I was at was me (WRX) one GTI and about 18 RX-8's. Towards the end of the day one of the cars dumped a bunch of fluid on the second last corner of the FABI track. The next 3 RX-8's to push through there (2 on slicks) went completely sideways but were saved by stability control. I slide through the corner like I was on ice and had ABS save my butt.
Like wing said, if you are smooth, it will never kick in
