Question about tire fitment for my wheels

I recently purchased some used Jeep OEM "Rogue Chrome" wheels for my vehicle. The size of the rims are 17" x 7.5" - what performance summer tires would fit safely on these wheels? I was thinking about TOYO Proxes S/Ts 255/60R/17 or would I be better off with the standard fitment of 235/65R/17?? What other (wider) sizes can I fit without risking any safety issues? How will wider tires effect road performance? Thanks for your help!
