Personally I have always been a fan of the NSX, 90-96 Nissan 300zx, Acura TSX/TL type interiors that flow forward with the center console slanted.  Makes me feel like I am going faster, plus I don't feel like I am trapped inside the car.  

The types of interiors I absolutely hate, I would call them "wall interiors," where you basically sit behind a verticle wall dash/console.  Mustang, 300C, New beamers with the stupid idrive display, the 2005 Audi A6 interior.  

Than I also really dislike "floating cosoles" like the RSX, ect.. I like the center console to flow smoothly with area where the shifter sits.

ANOTHER MUST MUST FOR me is the CONSOLE MUST DIVIDE the driver and the passager.  The center divider is important to me.  I can't think of any new cars that don't have the center divider?  Maybe a Lincoln? Most trucks have no divider, but I've noticed the divider becoming popular in trucks too, no more bench seat.  

I think my favorite interior overall is the 3 series COUPE (when i drove the 3 series sedan the interior felt small? not as wide? maybe I am crazy) interior without navigation.  It isn't might favorite style of interior but just very nice.  However I hate the new 5/6/7 series interiors...

Well anyway voice your opinion.

I'm all about the wood grain and leather: Lexus RX330, BMW X5.

Before, I preferred having the parking/emerg brake in the center. Now having a new car, I'm liking the pedal type better. Makes the mid-console much cleaner looking.

In terms of controls, I prefer knobs for certain functions over buttons. Especially for temperature and radio.

For color, I like contrast. I've been in an all-black interior and it's too boring. There needs to be black and grey or blue and black, etc.

Lastly, I detest cars with the speedo/tach/etc. in the middle of the dash...like the Nissan X-Trail. However, the cool/hot cup holders are nice.

I prefer leather and a monochromatic scheme, with brushed metal.  

That said, I got a gander at a new Infiniti FX-45 last week.  Glossy black exterior, with a pumpkin-coloured leather and black interior.  Unusual but very stunning.  Beautiful vehicle all around.

As for dials, I like mine.  They glow bluish-purple at night and they're easy to read.

Also - I will never, ever buy a car with a digital speedometer.  It's just not right.  I might be an old geezer, but I like the analog look.  Same for the clocks in my house and the watch that I wear.

I like Jag and Lexus interiors. Nice materials, nice layout, not too dark. Real wood is nice too.

I like any VW or Audi interior. They are clean, functional, simple and very well thought out. The choice of materials always matches the design. Based on pictures only I really like the 2004 GTO and the new C6.

I like driver oriented interiors like the S2000, simply but focused and the RX8.  I like the TSX interior as well.

Interiors must be made of good quality materials, all controls must fall easily to hand, and the instrument cluster does not have to be filled with lights and/or gauges.  Things must make sense.  The seats and driving position must be comfortable and the the visibility out all windows should allow the driver to see what's around them.  Redundant controls on the steering wheel aids convenience.

Give me curvilinear,beautiful,functional,tasteful,contrasting BUT complementing surfaces that are filled with clear,accurate easy to read analog guages and ergonomic ,even with driving gloves on ,knobs...Oh yeah and seats to die for that fit
4' 11'' to 6'4'' folks...NOT TOO MUCH TO ASK for when you Manufacturers spend Billions on "experts" and STILL come up with 90% Crappy interiors....bring in the Designer Guys,Queer Eyes and moderate the pink feather Boa,and puce carpet stuff with your guys and Hey Presto a great environment to ply our driving obsession....
THERE IS NO CURE FOR "LOTUS"......ONLY TREATMENT.....

Ron, have you sat in or driven a 6 series?  Certainly wouldn't call it a "wall interior".  Everything in that car is geared towards and hugs the driver.  
The RX330 is very plush...but I just can't seem to get comfortable in it.  The RX300 was better for my buddy type (6'2", 180lbs).

I agree with Jamesbe (besides the RX8...eww..is that a CD fossil on the console?), simple driver oriented interiors are perfect.  Lots of bolstering, as few knobs/buttons as possible, red dials, tall centre console divider, and LOTS  of leather (or suede) and wood (depending on sport v. luxury).
